Stuffed capsicum Recipe


INGREDIENTS
1 - 4 large red capsicums,( or 7-8 smaller ones) green ones are OK also,but the red ones have a
sweeter taste.
2 -500 grams of mince meat,either beef, or (what I used) half beef and half pork
3 -1 onion, 2 eggs, 1 chicken cube, 1-2 chilies,20 olives (10 green and 10 black)
about 150 grams of diced tomato sauce,and (usually also use 1 table spoon of tomato paste)
Grated Parmesan cheese, dried bread crumbs, oil, pepper and salt.
METHOD
Wash the capsicums, with a sharp knife,cut around the top of the capsicum, at an angle,so that
the top can be removed, and then used again as a lid, to stop the meat mixure from coming out,
remove all the seeds,and the the other fleshy parts from inside the capsicums.
For the filling.Cut the onion fine as to make small squares,put 2 table spoons of oil into a pan
and cook the onion until it starts to change colour, then add the mince meat, the tomato
sauce,the tomato paste(if used)the chicken cube (crumbled) the chillies (cut into small pieces)remove the seed,unless you want it very hot,add the salt,then cook (on high) for about 15 minutes,then tranfer it into a bowl, to let it cool down,then add the 2 eggs,the grated cheese (a hand full) and mix everything together(you can add the olives, also cut into small pieces) or you can do that later after you have filled the capsicums.
Depending on how soft the mixure is, you may have to add some of the dry bread crumbs,
The mixture should be a bit on the dry side,as if too soft it will come out when cooked in the
oven.
Now place all the filled capsicums in a oven proof dish,use a dish that can hold all the capsicums,
without too much space between them,add some oil on top of the capsicums, and 1/2 to1 cup of water in the dish also,then place them in the pre-heated oven (200 degrees) for about 30 minutes,occasionally, spoon some of the liquid in the dish,on top of the capsicums,and turn them
over a few times,so that they cook evenly, let them cool down,they can then be cut into slices and served.
