RECIPE--Onions and Liver
Here is a quick and easy to prepare recipe.
You will need
1- 1/2 Kg. Liver ( Calves)
2- 3-4 Onions
3- Flour
4- Parsley
5- 1 to 2 tablespoons of butter, or margarine
6- Salt and Pepper
7- 3 or 4 tablespoons of oil

Cut the liver into fairly thin slices, remove as much as of the thin skin around the sliced liver as possible, then cut the sliced liver into thin strips, and coat them with flour " this will prevent the liver strips from sticking together", some place the liver , and flour in a paper bag, and shake the bag, so as to coat the liver with flour, and then removing the excess flour.

Peel the onions, and slice them into rings
Place a non stick frying pan on the stove, put about half of the butter in the pan, and as it melts, add some oil, then add the sliced onions, and cook them until tender, they will become soft and change colour, Then drain them into a container (so that most of the oil/butter) remains in the pan, then return the pan to the stove, add extra oil/butter, add the liver, and cook over a fairly heat, and stir contents constantly, so that they cook evenly and do not stick together, only cook for a few minutes, or until the liver changes colour, or is nearly cooked, then you add the previously cooked onions to the liver in the pan,add the parsley (chopped) , salt and pepper, cook for a further few minutes (3-4), (if overcooked, the liver tends to go hard).
I prefer that the liver remains moist, but not so much, that it is drowning in the oil/butter mixure
It should be enough for 4 to 6 people

By the way you don't have to use Spanish Onions, I just happen to have them handy.
